
Fixing the “Cold Spot” Problem in Multi-Layer Ovens
If you’ve ever worked with a multi-layer convection oven, you know the frustration. You set the temp, you slide your trays in, and you just hope for the best. But more often than not, the bottom racks are scorching while the top ones are barely keeping up. Even with a fan blasting air around, that vertical temperature gap is a nightmare. We found a way to fix this. Instead of just trusting the air, we add infrared (IR) heating lamps to handle the heavy lifting and keep things precise. Getting a Grip on the Heat Here is the thing about standard convection: it relies on moving air. That’s fine, but air is lazy. It doesn’t always go where you want it to. IR is different. It sends energy straight to the food using electromagnetic waves. By putting independent IR tubes in every single layer, we stop relying on the fan to push heat from the bottom to the top. We treat these lamps like “trim heaters.” If a sensor notices layer three is dipping in temperature, the IR lamps in that specific spot kick in. It’s an immediate boost of heat that fixes one zone without overheating everything else in the oven. The Nitty-Gritty Stuff We usually go with short-wave quartz lamps. Why? Because they penetrate deeper. You won’t end up with a product that’s burnt on the outside but raw in the middle. But you have to be smart about the wattage. If you go too high for the size of your oven, you’ll get hot spots. And please, for the love of your product, use a PID controller to manage the power. If you just use a basic on/off switch, the temperature will swing wildly, and you’ll end up ruining the whole batch. The Trade-offs Nothing is perfect. IR lamps are fast, but they’re fragile. If you spray a hot quartz tube with cold water while cleaning, it’ll crack instantly. Then there’s the space issue. These tubes take up room, which means slightly less space for your racks. Plus, you can’t overstuff the oven. If you pack your trays too tightly, you block the “line-of-sight” for the IR rays, and the heat won’t actually reach the center of your food.
