Stop Waiting on Your Oven to Catch Up
Ever had one of those Friday night rushes where the kitchen is screaming, the tickets are piling up, and you’re just… waiting? Specifically, waiting for the oven to get back up to temp after you’ve opened the door for the tenth time. Standard convection ovens are slow because they have to heat the air first. It’s a slog. We do things differently. We use shortwave infrared (IR) tubes that skip the air entirely and blast the heat directly onto the food. It’s fast. Really fast. And that means you can push way more plates through the line without the bottleneck.
How it actually works
Inside these tubes, there’s a tungsten filament inside a halogen-filled quartz envelope. The halogen part is key—it stops the filament from wearing out too quickly, so the tube lasts longer even while running hot. The best part? IR energy moves in a straight line. You don’t have to sit around waiting for the whole oven cavity to preheat. You flip the switch, and the heat is just there.
Getting them installed
We made these as drop-in replacements. You shouldn’t have to rip apart your kitchen or remodel your oven footprint just to get better heat. Most of our units use standard R7s or SK15 connectors, so they snap in tight and won’t rattle loose when the kitchen gets loud and chaotic. One quick warning:Check your voltage. If you plug a 230V tube into a 400V circuit, it’ll pop instantly. On the flip side, if the voltage is too low, you won’t get that deep, golden browning you’re looking for. Just make sure the specs match your transformer exactly.
A few things to watch out for
Here’s the catch: quartz is fragile. If you touch the glass with a greasy thumb during installation, you’ve just created a “hot spot.” That uneven heat causes thermal stress, and the tube will crack. Simple as that. Wear gloves. Keep the housing clean. And make sure your oven has decent ventilation, otherwise, the trapped heat can start chewing through your wiring over time. Take care of the hardware, and it’ll take care of your ticket times.
