
Why Infrared is a No-Brainer for Pizza Production
Most ovens just heat up the air and hope for the best. It’s slow. You’re basically waiting around for the heat to travel through the air before it even touches the dough. We do things differently. By using shortwave infrared (IR) heaters, we skip the middleman. The heat hits the pizza directly. It’s the reason you can take a bake cycle from five minutes down to just 90 seconds. The secret is in the physics. IR radiation is absorbed almost instantly by the fats in the cheese and the moisture in the dough. You aren’t sitting there waiting for a big metal box to reach a certain temperature. It just happens. The best part? You get that perfect, crispy crust and bubbly cheese without turning the inside of your pizza into a cracker. Getting the gear right. To make this work, we use quartz-halogen tubes. These things heat up in seconds. No more wasting electricity while the oven “warms up” during a slow shift. Usually, we put these on top for that golden-brown finish and on the bottom to fire the base. But a word of warning: these arrays are power-hungry. If you’re ripping out old convection coils to make room for IR,**check your breakers.**You might find your current wiring can’t handle the load. It’s much better to install a new power distribution block now than to have your entire line go dark in the middle of a Friday night rush. How this changes your day. When you cut your bake time by 70%, everything on your floor shifts. Suddenly, the oven isn’t the problem anymore. Now, your bottleneck is the prep station. You’re pumping out pizzas so fast that your team might actually struggle to keep up with the toppings. It’s a great way to move more product without having to buy a bigger machine or rent more square footage. Just make sure you sync your conveyor speed to that 90-second window. Otherwise, you’re just making expensive charcoal.
